In a large pot over medium heat, combine the elderberries with the water. Mash the berries until all have released their juice. Heat to a boil and reduce to a simmer and cook additional 15 minutes. Remove from heat and strain. Return the juice to the pot along with the rest of the ingredients. Continue heating to a simmer. Season and adjust seasonings with more lemon juice, salt and pepper.
Place all ingredients into a medium saucepan and heat over till simmering. Cook for about 30 minutes. Strain into cup and enjoy warm. Sweeten with honey or agave nectar if necessary
