MARCH: OREGANO
Oregano is a favorite herb in many cultures and is easily grown in numerous regions throughout the world. Varieties abound, with several readily available for growing in our local area. Choosing an oregano is quite interesting — simply take
a little leaf off the 4-inch plant and its scent and flavor can be your guide as to choice. Good garden soil in a mostly sunny area, a slow-release fertilizer such as Arbor Gate brand, and adequate water are all that’s needed to succeed with an oregano that appeals to you. Its numerous varieties respond very well to use in your favorite spot, whether in a container or the garden, and it can be a very successful ground cover, helping to limit the spread of weeds among your plants.

2 Roma tomatoes, chopped
1 avocado, peeled and chopped 1/4 cup red onion, chopped
2 cloves of garlic
1 tbsp. parsley, chopped
1 tbsp. oregano, chopped
1 tbsp. olive oil
1 tbsp. lime juice
4 oz. feta cheese, crumbled
Combine all ingredients and chill for 2 to 6 hours to mix flavors. Serve with tortilla or pita chips.
