Broiled Asparagus with Chive Compound Butter
1 lb Asparagus
3 tbsp butter, softened
½ tsp lemon zest
½ tsp lemon juice
2 tsp chives, minced
¼ tsp pepper
Combine all ingredients except asparagus in a bowl. Combine thoroughly. Set aside.
Blanch asparagus in boiling salted water for 6 minutes. Remove from boiling water
to an ice bath. Leave in the ice bath for 3 minutes or until cool. On a foil-lined sheet
pan, arrange asparagus. Place under a broiler on high for 6 minutes or until desired
charring. Remove from the broiler and toss with compound butter.
