Chef Ryan Hutmacher and I have been long time friends. I met him on the set of WGN News when we were both doing features live at noon and we immediately adopted one another as go to healthy eating buddies. He came out to my front lawn vegetable garden to film a cooking series a while back (see photo above) and I have adopted his recipe we used for Curried Turkey Salad to be a Texan delight with a little kick and a whole lotta love.

Below is the delicious recipe which is perfect on a summer’s afternoon with tortillas and iced sweet tea. Watch the recipe video below for more “how-do-you-do” on the how to.

Curried Turkey Salad
3/4 lb turkey breast, medium diced
1 1/2 oz grapes, halved
1 1/2 oz apples, diced small
1 1/2 oz celery, diced small
1 1/2 oz onions, red, raw, diced small
1/2 oz dried cherries
1/2 oz raisins

Dressing
2 oz mayonnaise (or substitute 2 ounce organic Greek yogurt, plain, lowfat such as Stoneyfield yogurt)
1 Tbs dijon mustard
1 Tbs curry powder
1/2 Tbs vinegar, red wine
½ tsp chili powder
1 tsp lemon juice

3/4 oz lettuce
4 each tortillas

1. Combine all of the dressing ingredients, blending until smooth. Season to taste.
2. Toss the turkey, grapes, apples, celery, onions, dried cherries, and raisins with the dressing.

Servings: 4 – cost is under $10
